Life has been hectic as of late. We have opened a new Italian restaurant in Portland and for the most part, all of my free time is gone. I figured I spent 211 hours in the place the first two weeks. I NEED SLEEP.
The owners are great people that have brought in a bunch of their own recipes that they call Rustic Southern Italian. Well, I don't know about you but, there isn't that much cream used in all of southern Italy. Got them to change things a little bit and just call it Rustic Italian.
Now comes the fun part, me changing all of their recipes to make them more authentic.
So far, they have loved everything I have done, and why wouldn't they?

There are so many Italian restaurants about, it's always refreshing to stumble across one that is really authentic. Try not to get yourself wrapped up in work too much, I know that it's easier said than done sometimes, but your body needs rest.
