Yeah, it's been awhile but I finally have something new to say.
First off, a couple months back I accepted the Executive Chef position at the oldest Italian restaurant in Portland, Oregon. Place has been open since 1949 and they asked me to be the guy to bring them into their 60th anniversary next year. Pretty freaking cool if you ask me.

Life has been hectic as of late. We have opened a new Italian restaurant in Portland and for the most part, all of my free time is gone. I figured I spent 211 hours in the place the first two weeks. I NEED SLEEP.
The owners are great people that have brought in a bunch of their own recipes that they call Rustic Southern Italian....

There are so many Italian restaurants about, it's always refreshing to stumble across one that is really authentic. Try not to get yourself wrapped up in work too much, I know that it's easier said than done sometimes, but your body needs rest.
