Gravity Falls was amazing! I dressed as Dipper a couple times. Adventure Time is a bit lower key, but still clever and fun. Rick and Morty is much more adult, but there are plenty clever plots and references that go on. I've heard Over the Garden Wall was really good but haven't watched. The Amazing World of Gumball is also clever and packed full of clever statements about current society. I have yet to find a show as deeply intertwined and complex within its simplicity as Gravity Falls. It gets pretty deep with its views on parallel dimensions and even time travel.
