I discovered these guys at the PA Rennesaince Faire a few years back. I bought the radish honey they made and after that I've been hooked. I <3 honey. I think I'm going to try the Mallow honey on this sandwich though.

You got paid, but will more than likely get a negative mark against you, and even after she pays she may dispute it via paypal.
I think it is better to try to compromise with the customer and ensure that they are happy so that they will give you repeat business and positive word of mouth rather; particularly on such a small site as etsy.
