We racked the Citra IPA over to secondary for dry hopping and brightening. It went well in fermentation and had good attenuation. Sitting at 6.8% with a nice lemony flavor. Will keg in a week and half or so.

We brewed up a new batch of our Citra IPA. Some differences from the last recipe. Expected more hops flavor in the wort. These citra hops are really strong. Fermentation is going well it seems. Quite the churning going on inside there. The beer will bot be ready for New Year's. It'll be maybe a week later. We should have two more going by then.

Bottled our Citra IPA and Russian Imperial Stout tonight. The IPA is AWESOME! Can't wait to drink the finished product. The stout is tasty but not exactly what it could be.

So, I brewed a dark ale (bottling this week, so still no idea what it'll be like) using a beer kit. But I have been reading Papazian and have lots of ideas for proper recipes now, just have to decide where to start.... I like some IPAs, although I have a tough time with the bitterness sometimes. I just finished a very interesting book about a guy who recreated the traditional IPA recipe and then took a barrel of it on ships from the UK to India to taste it. It was a very good book, with lots of history about IPA as well as India, and the East India Company (called 'Hops and Glory' by Pete Brown if you're interested).

Just wrapping up a bbq with a several different friends. A very eclectic mix of people. Very happy. Had a good long weekend. Took Friday off to make it a four day.

Making plans already for my Fortieth(1) in March.
