my "working" interview went very well.. i was asked to make a pear hazlenut salad to my taste so the chef could see how our tastes compare.. i made it a tad on the acidic side.. which he said was justa bit more than he likes it.. but its going to be used on butter lettuce which needs that extra bit of acidity... whatever.
i was then asked to make..of all things.. tofu scramble. i almost laughed... but i didnt. so i made it.. and the chef said i was the only person to take the sam approach he did.. by crumbling it. we then joked about how the other people he interviewed were dicing the tofu and how people usually put WAAAAY too much turmeric in it... which makes it taste dusty and bitter. Well... we didnt put turmeric in this one, but it came up somehow.
I had the right answers for everything craig asked me. I have this interviewing thing down. I am never nervous and i always know what to say. Not that i'm lying.. i just know what to say as soon as i'm asked because ive heard them all before. Except this one "We want to avoid friction between the front of the house and the back of the house... how do you suggest we do that?" and my reply was a long babble about how at the country club we were all friends outside of work.. we went out for drinks after work.. we went on weekend ski trips (which is all true).. and generally hung out OUTSIDE of work. We got to know the people not as the waiters and waitresses that fuck up all the time.. but as real people. In a non-stressful environment.. blah blah blah blah...
he liked the answer.
I showed up at the end of someone elses interview..and it was just so weird.. they were acting so "professional".. which is good.. but it didnt seem like they were putting the real person out..it looked like they were holding back. But for some reason i felt so comfortable around craig and stuart.. it was extremely casual and we joked around a lot. It was like i wasn't at a real interview. but whatever.
Stuart told me that i was one of the most accomplished cooks he has interviewed.. and if i got hired i would probably be working the line with him.. which is where i want to be so i can show him that i have the skills to be his sous chef. i also gave him a lead on organic bread that worked out. Which looks good for me.
let's hope it looks good enough... i WANT this job.
I find out this week.
===
I'll have to bring up my plans on going to europe in june or so.. which could be a touchy subject.
===
I am so much more open minded since ive moved out here.. about everything.. i never cared about politics.. or the state of our country... or anything like that.. i mean.. i care. but not with the passion i do now. Being in such a liberal city has taugh me a lot about myself and the world.
im glad i'm here.
time to go look for my credit card again.
