Spanish, Mexico is a beautiful place, specially the south east, but with all the violence due to the drug wars i wouldn't recommend going there right now, specially not for a long period... Costa Rica and Panama are also great options, but a bit expensive... and for South America and good spanish I'll suggest Ecuador and Chile
