Since Friday I've been doing holiday baking.
For the first time in years (That's another story all together 🙄). We went over to my parents house for an early Christmas get together on Saturday.
I made a pecan pie, carrot cake and chocolate oatmeal cookies.
I've made pies a lot over the last few years. Blueberry, apple, pecan & pumpkin mostly. This my second year making pecan pies for the holiday. We are going to my wife's family tomorrow. My mother-in-law would always bring a carrot cake to family get togethers. But we hadn't had a carrot cake at an family event since she passed away a few years ago. So this year decided that I was going to try and make her carrot cake recipe.
Friday night made my trail carrot cake. Which I took over to my parents house along with the pecan pie and oatmeal cookies. The carrot cake & cookies was a huge hit. My Dad loves my pies I make and hid it as soon as I handed to it to him 😁
I made my second carrot cake tonight. I was making the icing and realized I was out of powdered sugar 😶 thankfully I found a tutorial on line of how to your own powdered sugar with a blender/food processor.
