I was out of coconut, but I did have some pineapple. Sometimes you have to go back to the beginning when it looks like things are moving backwards. Here's to the Missionary's Downfall, and Beachcomber Don, because we overcame this shit before, and we will sure as hell do it again.

5 Chunks of Fresh Pineapple (or juice) - 8 mint leaves - 1 ounce fresh lime - 1/2 ounce Demerara Syrup - 1/2 ounce peach liquor - 1 1/2 ounces blended lightly aged rum ---- Flash blend all the wet ingredients and the pineapple in a mixer with a bit of ice -- strain -- Add the mint -- enjoy.
