Recipe:
Golden Potato-Leek Soup with Cheddar Toast
1 tablespoon butter
3 cups thinly sliced leek (about 3 medium)
6 cups cubed peeled Yukon gold potatos (about 2 1/2 pounds)
2cups of water
1/2 teaspoon of salt (add more after if needed)
2 (14 ounce) cans of organic vegetable broth (ex. Swanson Certified Organic)
2 thyme sprigs
cheddar toast
8 (thin or thick) slices of sourdough french baguette bread
drizzle teaspoon of EVOO or cooking spray will work also
1/2 cup (2 ounces) of shredded sharp cheddar cheese
1/8 teaspoon of ground pepper (black or red) cayenne if you don't know what red is.
If your a Veggie person like my buddy Clover, you can substitute the butter in the soup and make a nice brushetta with nice ripe tomatoes and basil for the toasts. still very yummy.
So anyone want me to come over and help make this with them? hehehehe and can i bring my girlfriend?

i want soup.
i have $1.88. I don't think that's enough to buy a cup of soup somewhere, and not enough to buy the ingredients for soup i want to make.
