I just pulled two loaves of pepper jack bread out of the oven. It smells good and looks done, but it can be hard to judge thorough cooking as the knife test will always come out wet from the cheese. The sheen is right on the crust, so I'm fairly certain it'll be ok. One loaf is for the big SGPDX trip and all my cohorts, another is MINE!
Pepper Jack Bread
2 cups all purpose flour
2 cup shredded pepper jack cheese (more or less to taste)
1 tsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup buttermilk
1/4 cup melted butter or margarine
2 eggs, slightly beaten
Mix flour, cheese, sugar, baking powder, baking soda and salt in a bowl. Stir in remaining ingredients (melted butter last). Batter will be lumpy. Spread in loaf pan. Bake at 350 for 30-45 minutes or until knife comes out clean in thickest part of the bread.
