I'm hoping to get a little bit more into meal prep, for several reasons:
1) Cooking at home more often can be cheaper when you're not a rich person, obviously depending on the dishes you plan out and how many ingredients you need.
2) Meal prep reduces the sense of responsibility and work load during the week.
3) The portions are more controlled, at least if you try to stick to a specific regime and routine.
4) Homemade meals can (again, obviously) often be healthier than ordering takeout all the time, at least if you use a lot of fresh and natural ingredients.
I was inspired to start off with enchiladas, with salad and avocado on the side! With the amount of ground meat and tortillas I got, I had enough for two enchiladas. So I had two of them for dinner today, and I have the remaining six for another three meals.
Simple, quick, filling and delicious!
