I just re-read some stuff about my favorite chef, a guy here in London named Fergus Henderson.

Then I tracked down this neat interview with him.

Then I found this quote, which really shows the guy's personality: "If you're going to kill the animal it seems only polite to use the whole thing".

And then found this, even better, interview.

I'm all quivery; I can't wait to go back there.
