I have kind of an exhibition/interview on Tuesday where I'll have to showcase my skills and prove my knowledge. I've been doing sushi long enough that I should feel completely confident, but I'm not. I'm feeling anxiety. Whatever. Its good if I'm a little nervous. I know I've got plenty more to learn and there's no way I would bullshit these folks even if I could. I have a style I've developed over the years. Hopefully they'll appreciate the way I take care of biz. I know I contribute a respectable example of the craft, even if it is a little unorthodox. I'll add to the success.
I just read Whoreson by Donald Goins, almost done with A Cook's Tour by Anthony Bourdain, about to start The Heart is Deceitful Above all Things by JT Leroy. We'll see. Any Recommendations?
