It's just another manic Monday, I wish it were.......
TUESDAY cause then I won't have to come to work!
Haha, bet you thought I was gonna say Sunday! Oh, you gotta love that song.
I really love sunset pictures. They're just fabulous and I can't get enough of them. I wish the sky would always look like it does at sunset with the most vibrant pinks, purples, oranges.
I wish some of the old girls would put up new sets. Like Chloe and Mary.
A little while ago I made some macaroni and cheese that was SO good so I'm going to share the recipe with you all:
- half pound macaroni noodles (uncooked)
- 2 cups sharp cheddar cheese
- about a 1/4 cup of parmesan, romano or asiago
- about a cup of havarti cheese
- couple shakes of nutmeg
- couple shakes of paprika
- couple shakes of chili powder
- LOTS of hot sauce (or a little if you're a pussy)
- 3 tbsp. flour
- 4 tbsp. butter (NOT margarine)
- 1 and a half cups milk
- a cup or so of diced onions (use more if you're an onion lover)
- a couple cloves of garlic, minced
- 2 tbsp. olive oil
- some bread crumbs
Cook noodles according to package instructions. Heat your oil in a pan and saute the garlic and onions together until the onions are translucent (or carmalized, whichever you like more), set this aside. In a big saucepot melt 3 tbsp of the butter (leaving 1 tbsp for later). When melted stir in flour and stir for 2 minutes. Slowly add milk, whisking it in as you pour. Let this thicken a bit, but not too much, don't let it boil. When it's a little thick add all your shredded cheeses, spices, onion and garlic and hot sauce. Mix until cheese it melted and sauce is smooth and thick. Add cooked noodles, stir to coat all the noodles. Pour into a greased baking dish. In your onion pan melt the remaining 1 tbsp. of butter and then add as much bread crumbs as you think it will take to coat the macaroni and cheese. Mix together and then put on top of macaroni and cheese. Cook at 350 degrees for 30 minutes or until bread crumbs turn golden brown. Serve with garlic bread.
To mix it up a bit add some tuna or chicken before you bake.
I hope you all make this, it's SUPER GOOD and it will give you an excuse to yell "Yum yum, come get some!"
