hi all,

so my big test went good.. all A's on my prepared dishes.

1.) sauteed fillet of snapper with mushroom quinoa and bacon vinaigarette.

2.) snapper fillet en papillote (sealed and baked in parchment) over vegetables with a lemongrass beurre blanc.

3.) sauteed shirmp over pasta with roasted corn, jalapenos, red onion and garlic with a chili lime sauce.

no pictures to show yet.. i'm exhausted. i was trying to slice a stalk of lemongrass lengthwise during the cooking exam and sliced the pad of my thumb instead. all of these years cooking and its the first time i've done such a thing. so i had to take time out.. stop bleeding.. fix it etc. quite a pain.

well kids.. i'm pretty tired from the big test.. yes i will post pictures.. but tomorrow morning i'm leaving to go visit my family in michigan and won't be back until monday night. i wish i had more time to respond to people.. but i will have to when i get back.
