i want to know why this home schooling bullshit works for every grade you want to be in at home, except for college. why cant i just stay at home and be like, yeah, im in college, im homeschooled, and i have a PhD.

Dude, I hear ya. If I could get my PhD at home, I'd be the happiest man in God's creation. However, I don't think it's in the cards. I'll ask my thesis committe though and see what they have to say.
