You will need: 2cups sweet yellow onion; cut into long thin strips(this is called julienned), 2 cups white basmati rice;not yet cooked,1cup lentils(red,yellow,or green is up to you);uncooked, 3or4 cloves garlic;minced finemaybe some salt if you feel like it.
start bysauteing your onions In a non-stick pan over med-high heat in either butter or olive oil. (i'm going to use both together)DO NOT LET THEM BURN. they tase nasty when that happens. Saute them to the point where they are browned, stir constantly the onions should be limp, and yellow-brown.add your uncooked rice to the pan, with the garlic, and slightly brown the rice (this is called toasting) Removefrom heat immediately.Follow directions for soaking on lentil package. Add the soaked lentils to your cooled rice mixture.Make rice as you normally would using the mixture we just made.Add 2 saffron threads to the water you use to cook your rice. give it 20 minutes or so, and voila! you should have avery yummy very cheap vegan dish. PS I'm thinking of adding green bell peppers to the saute mix.....
