I took my last bottle of my show Mead to my friends' friends who own a local winery. They liked it. We chatted and what-not and I think things are looking good. I may see my homebrew sold for real soon enough,,,,

I love the smell of my fermenter burps. It smells like good Altbier.

This fermentation took off only a couple hours after pitching. Awesome. In less then a day I had to switch to a blow-off tube from the sheer pressure. The lid of the bucket is straining. Killer.

Alt recipe sounds good. Just keep your steep water very low (just enough to cover your grain) and you'll be mashing, really. I used to do a lot of partial mashes like yours but extract is just too damn expensive. I got a Phil's Phalse Bottom and can mash about 14 pounds in a bottling bucket, if I need more I put a few pounds of extract and/or various sugars in. Usually jaggery, turbinado or honey.

Reculturing yeast and doing at least mostly all-grain I can make a lot of beer cheap. Bottling it is the problem...

I need to rack off my apple mead. It's fermented through all the ciders' sugar plus almost two and a half pounds of honey. It's got so much alcohol in it my nose burns from it. But it has a lingering, sweet apple taste that comes through. Dangerous.

Oh, and what's your cyser recipe? Mine have been about a gallon of honey and 4.5 gallons of apple juice for 5 gallons of final product. Still hot after 3 years, but nice.

Try Ctes des Blancs yeast for meads next time, it's nice.

Hellllllllooooooo day off....

It's raining but I'm BBQing anyway. God I'm such a fucking rebel. Take that weather!

Gonna make a smoked pork loin, scalloped corn, bbq beans, potatos, and beer. Lots of beer. And a nice pull off the ole' mead jug in my closet. Booya. ARRR!!!

I've felt good the past couple of days. Not just pshysically, but a mental sense as well. Awesome.

Anyways thank you Trader Joes for stocking mesquite honey, and cheap at that. It'll be perfect ot ferment out with some fresh peppers I smoke on the grill. And I'm thinking pineapple.
