Saturday I entered my latest batch of homebrew, my brown porter, in the St. Louis Holiday Homebrew contest. I hope for little more than good judge feedback. I don't expect to place really, but it would be nice I'm sure to get some neat free stuff or moola. The judging is the 9th. Booya.

Lately I've had a rather unhealthy obsession with pierogi. It's like I can't get enough. How odd. I think it may be some sort of deeply ingrained instinct within my Polish genetics telling me to fatten up for the winter. So I bought a 6.5 gallon turkey fryer today at Sprawlmart for 37 bucks. This is a good thing, as now I can convert my brewery to all-grain and save a fortune. It also allows me to obssessevly fine-tune my recipes and waste more time making beer. This is also good, but also probably why I'm single.

Holy shit. I think I've gotten more comments in the last 24 hours since I stoleded the zot profile than I usually get in months. Seriously. I kinda think it's cool, so I may stick with it awhile. biggrin

Instead of caramel malt I'd put like a 1/4 pound of Special B in there. And why bitter with any kind of Goldings? Ick. Too much vegetative matter! High-alpha hops are your friends! You know my theories on bittering hops, etc.

But yeah, I'm all about mixing American/British styles with Belgian ones. If you don't want a bunch of esters pitch Duvel yeast (WY1388), which will give you some nice spiciness and Belgianosity and should really compliment the Strisselspalt.

I'd save the distilling for the malty beers, personally. Ice distilling will be fantastic when it gets cold enough outside. Distilling a hoppy beer will concentrate the IBUs a lot and dissipate the aromatic/flavoring hops.
