Have you tanked the carb and soaked the jets in acid? That's what we always did with stubborn gas deposits. carb gets disassembled and all parts except jets get dipped in the tank for a day, and all jets get dropped in a small cup of fresh battery acid for at least a day.
That's not a bad price. I've found through many episodes of cleaning carbs that the disassemble/dip/jets in acid thing is the only way to go if you want to be sure things are really clean. I did a set of shadow carbs on the cheap when I didn't have access to a dip tank and acid and they looked great but the bike refused toi idle without the choke, like yours does. Turns out the idle jets were still partially clogged. Once the dip/acid was done it ran fine.
