Tons of great daytime activiites in NYC. During the week there's tons of great art museums (the Guggenheim just opened a new exhibit, and MoMa is one of my favorites even if it's still in its temporary space.) Parts of Chelsea and SoHo are good for small galleries if you want to walk around (and potentially buy something.)
Great movie theaters in the area - Anthology film archives over in my neighborhood, Sunshine Cinemas also in my neighborhood, Film Forum in the West Village and the Angelika are all theaters that cater to independent film. Obviously it's easy to see mainstream film.
Theater is fun but probably not much during the day except on weekends. Check off broadway for more avant-garde, less "disney" type performances.
At night there's even more to do, as I'm sure you're aware. Great food, dancing and nightlife until 4AM every night, later if you look hard. Let me know if you have specific questions about anything.
