Funny, but I'm not sure if I've read a purely-letters book. I'm sure I must have. Oh, there's Feelings Sorry for Celia, which is an Australian young-adult novel but pretty absurdist. It's told through letters and notes, because this girl and her mom have such a weird-relationship they NEVER see each other so the mom only talks to her daughter through fridge-stuck notes (they live in the same house but never meet up face to face). Also, Sophie's World has some letters between characters in different states of being.
