when you mix the eggs don't warm them up too hot. you don't want you eggs to get boiled(hard)
au bain marie = put a pan on the stove with water in it. put the bowl you mix the eggs in in the hot water.
If you have the chance to practice this recepy do so. writing it down makes me realise it might not be an easy recepy. but then again i don't know you. mabey there is a little chef in you
