why not go with kevlar gloves? It's what I use for security.

For full contact knife sparring, I use standard fencing gloves (~$20) with rubber knives like the Cold Steel or Boker Applegate trainers. For heavier weapons (anything metal) we use street hockey gloves. Some kind of forearm guard is good too if you've got aluminum knives. If you're targeting the head, you'll definitely want a fencing mask. You can get a basic 3 weapon mask for $50 or $60 bucks. There's no need to be fussy about specific brands for any of this stuff, just find the best deal online.

If you're not doing full speed/full contact, safety glasses and light fencing gloves are plenty.

I probably wouldn't recommend work gloves. Even with the rubber knives, you want that little bit of extra padding over the joints.

i'm a firm believer in "you get what you pay for", at least as far as riding gear is concerned. about 3 years ago i dropped $70 on a pair of quality snowmobile gloves for ice riding. once you're riding for about 35 minutes in 10 deg. F things can get numb, but i've never felt cold fingers while on the street with them.

I made myself a pair once. I left them in my shed at work and a mouse used part of them for a nest. I am really bummed, but that means I can make myself a new pair to practice. I'm sure everyone else's are better than mine or I'd offer you some pictures as well.

Mechanix has a line of tactical gloves that offer knuckle and finger protection. These won't be as bulky and won't protect your wrist, but I imagine they will offer a better grip and dexterity.

Or you could try the Blackhawk S.O.L.O.G. gloves. They look like they might offer some wrist protection.

wow, opnly 3 tries till i got it reight. <---and i'm not going to fix that one. it is too cold in my house. i cannot remove my gloves.
My attempts to bake the perfect glove have once again ended in failure. Perhaps I should simply admit to myself that gloves should be knitted, sewn or stitched but never baked. Gloves and ovens just do not mix. The sooner I realise this the sooner I can get on with my life.
