Everyone step away from the man in the kitchen...
I decided that I was in the mood for corned beef tonight. And obviously the next week, too. I live alone, what am I thinking? Three pounds of meat, plus all the veggies? Lunch is served for a while.
And of course, I can't be completely traditional about it, no, I have to go off on tangents. Cabbage? Nah, lets use baby bok choy. Regular old brown taters? Nope, let's go with restaurant-style fingerlings. Plus shallots, Vidalia onions, extra spices (which have nothing to do with corned beef), and you get CBalaJC. And, instead of boiling it all together (like most folks) I've got the dim sum steamer-thingy going. Meat is simmering in the bottom, taters and shallots in the middle, and onions and bokchoy on top. Hell, it has to cook 3 hours, why not? But it's fun.

damn that beef sounds amazing. i havent decided what im gonna lace the phils to. i was thinking maybe some velocity aeroheads or some mavic open pros.
