Dark Horse Training, Eighth Night
Tonight I only worked from five to eleven. We were slammed, though, as it was trivia night. It sucked, but I feel like I made a pretty good showing for myself through what was basically the busiest time of week for us. I was working with Dark Dan and Dark Dustin and even Dark Rob was back there helping out. There were huge orders coming at us left and right and it was hard for me to keep track of the dozen things that needed to be made at once, but somehow I managed to both hold down my station and do dishes through all the madness and only made a few minor mistakes. I feel like I did a good job, even though I'm not sure it was seen as such. Dan criticized me for leaving my station to do dishes...but when Dustin and Rob both told me to do dishes any chance I got and if I hadn't we definitely would have run out of plates and bowls. Given that I was holding my station pretty well (no one was left waiting on me for anything) and I was getting all of the massive amount of dishes being generated done I don't really think dividing my attention between two stations is something to complain about.
I think I'm doing pretty well there, but it's been eight days of training and still I've hardly been given any training at all on our expensive entrees. That's the main thing that concerns me. I am going to have to be able to man the kitchen alone soon, and there's no way I can do that if I don't have a clue how to make our more complicated main dishes. Hamburgers and quesadillas are no sweat, but shit like tequilla chicken and fruiti de mar are complete mysteries to me. Hopefully tomorrow Dan will help me get better aquainted with the more advanced stuff.
