you cook it low and slow for like 11 hours, and you end up with this:
this is not very special. it is shredded pork with no salt and no moisture and no flavor. however, thanks to the joys of cooking it inside some kind of pan, we have this:
literally, a stockpot full of drippings. we simmered this for about two hours while we kept the pork warm in the oven, until it was reduced by about half.
