So where do you work? how long have you been there? What kind of Cusine do you like to cook?

i work at a very expensive seafood restaurant, i've been there for almost four years, and i am first cook. there are about thirty cooks at my restaurant.
i like to flambe, and i also enjoy sugar work. right now i'm still mastering cooking fish properly. different thicknesses, different types. i understand the concept, it's the timing that screws me up.
