You're really asking the wrong person, although I suppose you could do it with olive oil instead of butter. The original recipe called for cream instead of evaporated milk, and that substitution worked fine, but I really know nothing about cooking with soy milk. I guess you could try it.

Oh, I forgot about the cheese though. Fake cheese melts like crap. Maybe leave it out? Or just put it in anyway and see what happens?
