Well, I'm in TN for a few days, to have Thanksgiving with my family.

On the plus side, since both my mom's and my dad's sides of the family are in the same town, that means two Turkey Dinners in one day. Hooray for comfort-food-overload! oink

On the minus side, none of my friends from home are going to be here this year. I love my family, but I don't see my old friends nearly as often, and was looking forward to seeing them. Oh, well. whatever

On the "holding my breath and hoping this doesn't suck" side (I just made that side up), this will be my first major holiday as a single person in three years. Thanksgiving was always a big deal for my ex, too. I'm really missing her right now. Not to mention the fact that half my relatives will be constantly asking me "so where's that pretty lady of yours? Ain't y'all getting married soon?" My family means well, and my mom's tried to do some damage control, but it's inevitable, and it will suck. frown

So, at any rate, I am not looking forward to the holidays at all this year. I think I shall sit and honestly try to think of things that I'm thankful for...I'm sure there are many, and hopefully it will be theraputic.

Meanwhile, here is a recipe for my World Famous Cheese Grits Casserole:

Cheese Grits Casserole

Ingredients:
For the casserole: Quick Grits, 2 eggs, Kraft Garlic cheese (or equivalent), butter or margarine, milk, salt
For the crust: something crunchy (bread crumbs, chips, crackers, etc.), shredded cheese


Directions:
I. Cook grits: Bring four (4) cups of water to boiling and add one (1) cup of Quick Grits. Turn the heat down to medium and cook 2 to 4 minutes, or until thickened, according to directions on package. Add one (1) stick butter or margarine to the grits as they cook.

II. Then, after grits are done, remove from heat and add one (1) roll of Kraft Garlic Cheese, cutting it into chunks to melt faster. Make sure the cheese is blended into the grits.

III. Next, allow the mixture to cool down to add the following:
Put two (2) eggs into a cup measure. Beat slightly and add enough milk to make one (1) cup of liquid (this includes the eggs already in the cup). So that the eggs don't scramble in the warm grits, add a little grits mixture to the eggs in the cup measure to warm them up (so use at least 2-cup measuring cup, to make sure it won't spill). Then stir the eggs/milk into the grits.

IV. Stir thoroughly, then pour the mixture into a lightly buttered 13 x 9 glass baking dish. Bake at 325 to 350 for about 45 minutes.

V. After baking, remove from oven, and sprinkle shredded cheese on top of the casserole. On top of the cheese, cover with whatever crunchy stuff you pick to make the crust. Bake for another 5 to 10 minutes, or until the cheese melts. Allow to cool a little (it'll be damn hot), and serve. Should feed several people.

Variations on this recipe include experimenting with different types of cheese & crust ingredients, or adding bacon or sausage balls to the grits mixture before baking. Vegetables could even be added. Serve as a side dish or as an entre. Bon appetit. smile

and i am NOT looking forward to thanksgiving do to the fact that i have come to detest my fam. i have actually been skipping them, claiming that i am sick. but i have a child now, and they want to see HER (NOT me...they could care less). maybe i will claim that i am sick and let them take the baby and come home and sleep.
