When I was younger, I used to believe that adults are so set in their ways. I used to wonder how they knew what they liked and how they could be so stern on liking that one thing.
That opinion has changed. Whe you grow up, your options and preferences don't change, they don't get more narrow or more specific. You just get finely tuned to what everything is not. When people interact with people, there are some aspects that change based on that specific relationship. When people first meet people, each person is accustomed to the other people they surround themselves with. There are puns, jokes, thought process, and a general style of light conversation. These two backgrounds meet and collide. Some jokes work and some do not, and each person knows which is which.

anyways, you're right- i was thinking about this recently, about how i have and haven't changed as i've gotten older- and i realise that in many ways i still feel like the same person i did a decade ago, but my ideas are more defined, my opinions more concrete, less neutral, my values much more clearly outlined, and my tastes- well, i think they kind of evolve as you do, because you want and need different things from everything- be it relationships, or entertainment. also, i think, the role you play IN your relationships change- i used to sort of be the baby of my family, now i'm sort of the tower of strength who looks out for everyone- it's weird- and i think sometimes our make-up changes so subtly we're not even really aware we have changed. you know? ah, i'm rambling here, aren't i? and not even really on topic. oh dear.
