Ok, kids, time for another recipe. This is one I make from time to time so I can have a good breakfast all week.

Breakfast Burrito Mix

For cooking
1/2 cup of cooked breakfast sausage (about 1/4 pound or so)
1/2 cup of cooked bacon (about 1/4 pound of so, I use 1/4 a package)
1/2 cup of diced ham
2 cups of potatoes O'Brien (i like the Lynden Farms brand because it is diced small)
1/4 cup of butter
6 eggs
3/4 cup of milk (1/8 of a cup per egg if you want to reduce the recipe)
salt to taste
pepper to taste

For serving:
shredded cheese, I use a 4 cheese mexican blend, but you can use what cheese you like
Salsa
Tortillas

Cooking
1. Cook the sausage and set aside
2. Cook the bacon until it is crispy and set aside
3. Melt the butter in a heavy pan and add the potatoes O'Brien. Stir the potatoes often so they do not burn to the bottom
4. While the potatoes cook, finely shred the bacon and the sausage if necessary
5. In a bowl mix the eggs and milk until it is well mixed
6. Once the potatoes are cooked, add the sausage, bacon, ham, and egg mixture to the pan
7. Cook over medium low heat, stirring very often so the eggs do not stick to the bottom and burn
8. The mixture is finished when there are no runny eggs left, just like scrambled eggs

Serving
1. Heat tortilla on a griddle
2. Once the tortilla is hot put it on a plate and add the cheese on top, it will melt from the heat of the tortilla and eggs
3. Spoon about 1 cup to 1 1/2 cups of egg mixture on to the tortilla
4. Finish off with Salsa or cilantro or hot pepper sauce or all three.

Reheating
1. Place 1 cup to 1 1/2 cups of egg mixture in a bowl cover and heat in the microwave for 2 - 3 minutes
2. Put a tortilla in the microwave between two paper towels and heat for 30 seconds
3. Serve as above

Notes:
Save the leftovers they will store for several days and make a quick hot breakfast.
Do not keep them more than a week.

Unlike scrambled eggs, because you are stirring this a lot the curds will be smaller.

For a bit spicier recipe you can use chorizo instead of breakfast sausage.

I am not sure about a vegetarian option, but you could replace the meat with some vegetarian alternatives.

When I make this I am usually making a double serving since I am feeding four people, so it might take a bit of adjustment to get the right balance.
