Another day down, woo hoo! The pork was good, I chose to eat it and the potatos sans the fat sauce (which wasn't all that good anyway- I don't like beer) Chef Benoit ripped everything apart though...veg was slightly overcooked, the potatos shouldn't have had pepper on them, the pork was cooked too (perfectly, IMO) well, and the sauce didn't have enough vinegar in it. Last time I checked, pork was supposed to be served well done (grey and warm all the way through) ESPECIALLY if it came out of a vacuum bag 
. Mmmmmmm Botulism, my favorite. The Intermediate Pastry class loved it all though, other than the veg having a little bit too much salt (to satisfy the Cusinee doing the grading) but whatever...if they would buy it, I think it's acceptable, no? Fucking A man, fucking a.
I burned my left palm pretty good today because I'm an r-tard when I get in a hurry...I grabbed a metal pot that I had just taken out of the 400 degree over
boy was that smarts...Should scar up nicely in a few days...the skin is nicley stiff already, and my thumb has blistered a bit...quite the nice set of lines on my hand now.
4 more days until I can get back to NH for the weekend! And that means only 11 more days until I can bail the fuck out of Ottawa!
Tomorrow I have Pastry demo and practical...hopefully it's something good (which it obviously will be) that I won't feel too guilty about brining home, unlike the chocolate ganache cake that we did last week which I just couldn't bring myself to let into my apartment
...though it was SOOOOO good. I'm making it next weekend when I go home.
