Tuna Enchiladas
Ingredients
* 10 corn or flour tortillas
* 1 large white onion
* 1 clove garlic
* 1 can tomatoes diced
* 8 ounce can tomato sauce
* 1/4 cup tomato paste
* 1/4 cup diced green chilies
* 1 teaspoon cumin
* 1 teaspoon oregano
* 1/4 teaspoon sugar
* 1/2 teaspoon salt
* Filling:
* 13 ounce can tuna drained and flaked
* 16 ounces sour cream
* 8 ounces grated cheddar cheese
* 1 teaspoon salt
Directions
1. Saut onion, garlic and diced tomatoes.
2. Add tomato sauce, tomato paste, green chilies, cumin, oregano, sugar and salt.
3. Simmer 15 minutes.
4. Combine all filling ingredients and divide between tortillas.
5. Pour some sauce on bottom of pan then place filled tortillas on top of sauce.
6. Pour remaining sauce on top of enchiladas then sprinkle cheese on top.
7. Bake at 325 for 20 minutes.

2weeks from now Im havin a weekend mini vacation with a friend downtown, staying at the marriott for the fun of it, its the weekend of the air and water show so it'll be good. Gonna see if I can manage FINALLY getting some new ink that weekend too. (x fingers for me plz)

It sounds like you're going to have an amazing time. Just be sure not to drink too much before that tat, some folks bleed like a stuck pig which I am sure this is something you already know being that you already have had some work done.
