Chipotle mashed spuds.
I'm trying to control my starches and sugars and let me tell you what. I feel totally balanced! No more sleepy shit in the afternoon and weird fucking sugar spikes. So I made this mash where I used half cauliflower and half potato and it fucking rocks!
I could probably even back off on the spuds a bit more. maybe 1 part to 2 parts cauli.
Anyway, here's the recipe:
1/2 lb potato
1/2 lb cauliflower
1/2 medium onion
2 tsp roasted garlic paste
3/4 cup whip cream
3 tbsp butter
1 chipotle pepper in adobo sauce
cilantro
chop the potato and cauilflower into chunks and boil until soft. strain, mash and set aside.
Sautee onions in 1 tbsp of butter until carmelized. Add garlic and whipping cream. Bring to a boil. Chop up chipotle and add to cream. When slightly thickened, start spooning mush back in and whip constantly. If it' not creamy enough - try a hand blender to completely cream it. Add remaining butter and whip until incorporated.
Add salt and pepper to taste. Let it sit for a bit so the pepper permeates the mix. When done, roughly chop cilantro and toss in at the last minute.
Gattdamn that shit is good - and only half the starch!
