Not much new. I'm so broke right now. Not having money is the thing I hate most about being a student. It's killing my social life as I can't afford to go out as often as I usually like to.
It was Thanksgiving this past weekend. I did a roast chicken dinner on Saturday with friends and I even baked an apple pie with these amazing organic apples. Very tasty!

Oh here's my current favorite muffin recipe:
Chocolate Zucchini Muffins
1 cups whole wheat flour
1 cup unbleached flour
1/4 cup coaco
1 tsp salt
1/2 tsp baking powder
1 tsp baking soda
1/4 cup ground flax seed
1/3 cup light olive oil (remember light means taste & colour only)
1/3 cup unsweetened apple sauce
cup brown sugar
2 eggs
1 cup skim buttermilk OR 2/3 cup skim milk + 1 tbp lemon juice
2 cups zucchini, unpeeled & grated
cup chocolate chips
Directions
In a large bowl; combine flour, cocoa, salt,baking powder, baking soda and flaxseed. Stir until well blended.
In a large bowl; cream oil and sugar. Add eggs and buttermilk; mix well.
Add liquid mixture to flour mixture; stirring just until moistened. Stir in zucchini and chocolate chips.
Spoon batter into lightly greased or paper lined muffin cups, filling to the top. Bake in preheated 350 F (180 C) oven for 30 to 35 minutes or until done. Cool in pan for 10 minutes on wire rack.
Remove from pan and cool. Makes about 10 muffins.

oh thanks..i was looking at your pic to see if you rang any bells as i use to live in van for about 10yrs and haunt the railway club..but i don't recognise you.but i'm sure we probably know lots of the same people.

I've never thought about mixing zuchinni and chocolate, but it does sound interesting. Might have to gicve that recipe a try.
