Sounds like a lot of fun. White water rafting is totally nature's version of rollercoasters in my mind. Although I've never actually done the "rafting." Class three rapids in a canoe, yes (and it was wicked fun even the few times I ended up swimming), but not in a raft.

As for recipes, I always like a good spinach salad. The dressing is made from chopped vidalia onions, chopped hard boiled eggs, canola mayonaisse, and balsamic vinegar, with some applewood bacon sprinkled over the top. Obviously, not veggie or vegan or even healthy, but it is an occasional sin I love to endulge.
