I have to admit when I saw this early this morning, it gave me a nerd chub
And... I had a few friends over tonight for dinner.
I served them jerk chicken thighs (my own jerk rub) plated on a mango coulis alongside coconut rice with a simple red & green cabbage coleslaw marinated in a rum/citrus vinagrette.
While I cook jerk often, I have never placed much emphasis on the plating of the dish but I kinda played with it here so no critiquing please unless it's from pros!

The great thing is, this could easily be adapted for pescetarians with Halibut or another white fish, for Veggie heads with tofu or other soy mock-meat. Aside from the chicken, there re no animal products in this dish so vegans can adapt it.
Raw food eaters may be down with my slaw.
