today was fun. the first day of class and already i'm back in the kitchen. tomorrow i have to make pate en croute, duck galantine, duck confit, and three different types of sausage (chorizo, brautwurst, and seafood). this term is the garde manger or cold food term. we're learning about making cheese's and forcemeats. yep, the next couple of day's i get to cut up alot of pork butt (it's actually the shoulder). but luckily i get to make one of my favorite things in the world, caesar salad. mmm.... i just ate dinner and i'm already getting tummy rumblings. well good night all and remember. one of the most wonderful things about tigger's is i'm the only one, i'm the only one rrraaoorrrr!!!!!
