so. i don't like to cook. sometimes i even hate it. usually when i am about to get into the kitchen, jason cooks all or part of my meal for me. tonight i decided to do it all myself. gotta say, i freaking rocked it and it was fun feeling all culinarily creative. i pretty much used what we had in our kitchen and threw together a yummy vegetarian fake chicken, italianesque meal. let me use Google Images to take you on my journey of food preparation!

first, i chopped:
1 whole zucchini

1/2 brown onion

1/2 portobello mushroom

then i tossed the zucchini into a skillet with a little cooking spray and sauteed. after the zucchini had cooked a bit, i added the onion. after the onion had cooked a bit, i added the mushroom.

next, i added the veggies to a medium saucepan and poured in the rest of a jar of a pasta sauce we had.
the sauce was:

after that i simmered the sauce and veggies over medium heat and then seasoned the hell out of it. i don't know how to season anything, so i pretty much used everything. to my sauce i added:

basil
garlic
a bay leaf
oregano
seasoned salt
pepper
sugar
cayenne
and a splash of Kenwood merlot

i wanted the sauce to be "meaty" and hearty so the next thing i did was cut two Quorn fake chicken cutlets into strips, then cooked them in a little canola oil and Old Bay seasoning until they were nice and brown.

after adding the Quorn to the sauce, it was time to prepare some polenta! I sliced off about 5 pieces of polenta and browned them in the skillet.

I topped the polenta with some of the sauce I made, and topped the whole thing off with some grated parmesan and romano. this is the only actual picture i took:

it was delicious and filling plus there's plenty left to have tomorrow! who's hungry?
