Ok so nothing really got done at the restaurant last week, but now it really is almost done. We should be through inspections this week and start cooking next week. Probably won't actually open for another 4 weeks but that's cool, gives us time to get our act together.

Well, it looks like this new restaurant, Boho, will be off the ground shortly. Construction is 99% done, the kitchen outfitting is 99% done, and we should be cooking by the weekend, testing recipes and the like to get ready for the opening, which will hopefully be in a couple weeks or so.

I sort of accidentally took a leap of faith today. I was thinking about doing it anyway, then it happened automatically. It's certainly not the easy way out, but if things work out, it will probably be for the best.

I'm looking more long-term than short-term, and hoping the short-term resolves itself somehow.

Answer: Not to sell out. I don't have it in me. However bad it gets, I have to follow what's going to make me happiest, not what's going to make the most financially secure.

I just went back and read all my old journal entries (and replies to them) from October 1, 2002 through some time in July 2003.

They're pretty fucking hysterical, for the most part. I was sitting here laughing out loud about some of the shit I've written about on this here website. It was pure class.
