Because so many people have asked for it, I'm posting my recipe for vegetarian meatloaf. Keep in mind that everything is approximate because I never really write any of my experiments down...
1 bag vegetarian "ground beef" crumbles (I've tried it with both Quorn and Morningstar, Morningstar worked better I think...)
2 eggs or -worth of egg substitute, beaten
3 handfuls of Italian breadcrumbs (I know... technical, right?)
1 small can of tomato paste
1 medium yellow onion, chopped fine
1 handful grated parmesan cheese
garlic powder, Italian seasoning, salt, pepper to taste
Mush everything in a bowl and then pack into loaf pan. I usually top with a little tomato sauce and a couple slices of mozzarella. Bake in preheated oven at 350 for one hour. Enjoy! (I usually serve it with a potato side dish and bake apples... mmmm...)
