I bought a few pieces I was missing in my cookware. A second 2 qt pan, a 10" dutch oven, a second 8 Qt pot and my new favorite thing a 10.5" stir fry pot. I have a large wok, and I never liked it much. It is too big for the dishwasher and needs to be seasoned (coated with oil and superheated after washing).

The thing I bought is small enough for the dishwasher, non-sick ceramic and completely awesome in every way. I made the most awesome tasty pizza in it last night. Well, I baked the pizza in the oven, but I cooked the sauce in the pan, rinsed it out and boiled the sausage in the pan, sliced the sausage up and fried it brown in the pan and then flash fried the onions in the pan, fried the corn in it and then rinsed it clean in 2 seconds. and hung it back up!

I am here like 10.5" stirfry pan, where have you been all my life!! lol.

The Pizza was AMAZING by the way. If you live in Arizona, "Sprouts" market makes a really great Arizona Sausage.

Southwest Pizza

CRUST:

2 1/4 teaspoons active dry yeast
1 teaspoon brown sugar
1 1/2 cups warm water (110 degrees F/45 degrees C)
1 1/2 teaspoons salt
3 tablespoons olive oil
3 1/3 cups all-purpose flour

Mix hot water, sugar and yeast and let sit until foamy. Mix the rest of the ingredients together and knead well. Let sit and knead every 10 to 15 minutes. You really want to knead the crap out of this dough.

SAUCE

1 can diced tomatoes
1 tsp Oregano
2 tbsp chopped cilantro
1/2 jalapeno pepper
dash Hickory liquid smoke
1/2 tsp ground chipotle pepper
1/2 tsp salt
2 tbsp olive oil
1 clove garlic
Place all ingredients in a food processor until a fine puree. Then heat until cooked and set aside.

TOPINGS

1 lb Arizona Sausage (this is a Southwest sausage with cilantro and mixed peppers)
1 Roma tomato thinly sliced
1 red onion thinly sliced
1/2 cup fresh cilantro chopped coarsely
1 lb queso asiago
1 can of corn, fried in butter and smoke

Preheat the oven to 425. Cook, slice and brown sausage. Set aside. Drain the can of corn and fry it in a pan with butter and a drop of hickory smoke until it gets a slight orange color.

Knead dough one more time and toss or roll or press out onto a large Pam or olive oil coated pizza pan.

Spread a thin layer of sauce on the dough and then bake for 5 minutes.

Remove from oven and layer the rest of the toppings. Bake for 12-14 minutes until golden and bubbly. Brush a little olive oil on crust and serve alone or with guacamole.
