i empty a bag of lettuce and herbs from a store called Trader Joes into a stainless-steel bowl large enough to handle some good tossing capacity. i've got a little steamer basket gettin ready some stemmed and cut green beans to just under-done perfection. Before i know it, the crisp gleaming-green- beans are drained and added to the bowl. I really enjoy the color, taste and texture of simply boiled, cooled and peeled beets diced into my life. Where was i ?... On total auto-pilot,

the smoothest, rich, green FAT in, for the spin. One green onion minced, adds so much to everything it touches. i don't know what life would be like, or if it would even exist, for that matter, with out sea salt freshly ground in any shape, color, form, and origin. White Balsalmic Vinegar??? who's ever heard of such a thing? This place called Trader Joes had.
and i thought the sweetness would be welcoming to the beets and beans. i splash just a dash and follow it that with a bigger chug-a-lug of vinegarette. Mix, till you see the whole bowl smiling at you saying "eat me". This in the name of FOOD !!!
