I have been learning some fantastic recipes lately. One of my all time favorite is this recipe for pulled pork. I dont have any really fantastic pictures of it... but I'll do my best with my phone cam for now.

When i made this recipe i made it with two tenderloins about 2.7 pounds each. I am still eating leftovers from it. This is a great thing to make for a party or to make with hopes of having a lot of stuff left in your freezer for weeks to come. Best served with home made or deli coleslaw and with a nice dessert of Toll house home made cookies.

First of all make sure you get a lot of bread. Hamburger bunds are standard but i made mine on special rolls cut in half (they look like hot dog buns but they aren't i swear).

Ideally, select a 3-4 pound boneless pork tenderloin with not much fat. This size roast should feed about 10-12 people.

Preheat the oven to 400 degrees.

Shred, or chop very finely the following:
2-3 stalks of celery
2 carrots
1 small onion

Spray roasting pan with Pam to prevent sticking.

Layer the following:
Shredded carrots first
Shredded celery next
Sprinkle with chopped onion last

Lay the roast on top of this base.

Pour 1 cup of ketchup over the roast. (i just layer the whole thing in squirts of ketchup)

Cover and cook for 15 minutes at 400 degrees.
Reduce the temperature to 325 degrees.
Leave in the oven for 3 hours at 325 degrees.

Remove from the oven. Let it settle for 15 minutes. Then, using 2 forks, separate the meat, pulling it apart into shreds.

Once this process is complete, stir the meat around in the pan. Pour your favorite BBQ sauce (Montgomery Inn or Sweet Baby Ray's regular work. Make sure you get a BIG bottle. You will use more than you think.) over the meat mixture and return to the oven for at least 1 hour more at 325 degrees.

Serve up on fresh buns and enjoy!

Like i said this makes an AMAZING meal and leaves an amount of leftovers that is equally amazing. Enjoy
