Oh, you would not believe the kind of chili I can make. I start by making my own stock out of bones and spices and stuff, which is the most important part. Then I sear the pork (I use tenderloins, much better flavor than cheaper meat) and roast the red peppers and garlic to give them a deeper, smokier flavor. I use black and red beans, and sometimes add corn too, to go with the homemade cornbread that just has to be made with chili. It takes me all day, but it's totally worth it.
