well, it sounds like shes not telling him because she has made excuses to him for not seeing him when she has been seeing you, and cant risk that you mention something totally normal that will make him realise she hasn't been upfront with him.
I know you're hung up on her, but she sounds like a bit of a player.
Its hard to distance yourself from how it makes you feel..but its her problem not yours.
If it makes you feel better, ask her to be honest with him about any future meetings outside of work times, but dont beat yourself up about the things that you cant change.
I have friends that are 'players' of both sexes, and I've just had to learn to accept that this is just part of their personality, and if you want to keep being friends with them, you accept it.
Of course, if you want more then its harder, because people like that rarely change, and you have to decide how much hurt you can cope with.
