I've been reading through Apocolypse Culture II and I think that Issei Sagawa is one of the two most interesting murderers ever--the other being Richard Ramirez for the excessively creepy randomness in choosing who he killed. Or rather the lack of 'profiling'.
Issei Sagawa killed a girl he was in school with in France in the early 80's by shooting her in the back of the head, with the intention of eating her. He'd had fantasizes about cannabalism since he was three. And the fascinating thing about him is that once he did he lost all desire to ever do it again, and he can't understand how people kill once then keep at it. He actually wound up mortified by what he did and wasn't inclined to do it again. Pretty strange. But he said he didn't focus on the desire to kill her, but rather to eat her. Maybe that's why.....hmmm.
