i wonder when i'll get it...being that i dye my hair at least once a month...this would be about 4 times in 4 weeks' time...hmmmm...

I'm actually in the midst of my second or third mid-life crisis (doesn't say much for my life expectancy, does it?), and I've gone back to school to get a culinary degree.

We made a couple different kinds of custard tarts today; one was a pretty standard fresh-fruit tart, where we made the dough, put it in a tin, baked it; made the custard, pulled the crust out, smeared the custard into the crust, and topped it with fresh sliced fruit and an apricot glaze. Then we made another one, where we poached some pears in a red wine sauce, made another crust but didn't bake it, made an almond cream custardy goo, smeared that into the raw crust, then fanned the pears and put them on top and threw the whole thing into the oven to bake.

Baking's not really my thing, though. I was thinking about sticking around another semester after my program is over to get my Patisserie certification on top of my Culinary degree, so I'd be qualified to be a pastry chef, but unless I get a lot more excited about baking than I am right now, that ain't gonna happen.

As far as favorite recipes ... well, I made up a pretty good red bell pepper / bacon cream sauce last week that I'm pretty excited about. Basically, I minced up like 4 red bell peppers, an entire shallot head, and about 5 or 6 cloves of garlic, and diced some bacon, about half a normal pack's worth (easier to dice if it's frozen). Start sauteeing the bacon in a sauce pan in a little bit of oil, and once the fat is all melting out, throw in the minced vegs. Once those are getting soft, pour in some white wine (about 1.5 cups), and let that simmer down some. Then throw in a big lump of butter, let that melt, and add some heavy cream. Once that's starting to reduce pretty good, throw in a big hunk of ricotta cheese, and some ground cinnamon. Let that melt and get nice and saucy, and just before it's finished, throw in some fresh chopped parsley and basil. Voila, you have a red bell pepper cream sauce. If you want, you can reduce it down even further, blend some corn starch with a little water, and mix that in. Pull it off the heat and cool it in an ice bath, and it will get really thick, and you can use it as a fantastic ravioli or tortellini filling.

I'm pretty jazzed about that McDonalds business, too ... but I was talking to a (big) friend of mine about it last night, and he said, "You know, though, that McD's is just going to make more money by doing this, because now, instead of spending the extra 39 cents to super-size things, people like me are just going to spend the extra dollar or whatever to get an extra order of fries."

So that made me sad. But I guess in the end, people just have to take responsibility for themselves.

i begin march a single girl. i never mentioned that the whole breakup thing awhile back didn't work. we still sort of floundered around trying to make something of our feelings.

well, now we're strictly friends with benefits. we're both tired of trying to make a functional relationship without the resources to do so.

i would love to read more but i have the shortest attention span ever. i will read a paragraph and stop and think about it or something else for 10 minutes. it takes me a half hour to read a page. sheesh.
